岗位职责1、掌握各食品制作原材料名称、产地、味型、特点、起货成率用法和制作方法,2、制定日常生产所需原材料的使用计划根据实际情况进行成本核算,3、主持并参与菜式的烹调工作,确保出品质量,4、负责对下属员工进行业务技术培训,5、严格按照岗位责任制的有关标准开展工作,6、做好食品卫生和员工个人卫生的管理工作,确保食物卫生符合国家标准,      7、配合总厨合计新菜式开发新食品,并做好定量定价标准,      8、完成上级交办的其他任务。
