职责概述
GENERAL MISSION
在饼房领班或主管的指导下,负责各类蛋糕、面包、巧克力及西式甜点的具体制作、装饰及准备工作,确保个人出品符合质量与卫生标准,按时完成生产任务。
Under the guidance of the Pastry Demi Chef or Supervisor, be responsible for the specific production, decoration, and preparation of various cakes, breads, chocolates, and Western-style desserts. Ensure personal outputs meet quality and hygiene standards and complete production tasks on time.
工作职责
RESPONSIBILITIES AND MEANS
按照标准食谱(SOP)和主管要求,独立或协作完成蛋糕、面包、甜点、巧克力等产品的制作、整形、烘烤、装饰及摆盘。
Independently or collaboratively complete the production, shaping, baking, decorating, and plating of cakes, breads, desserts, chocolates, etc., following standard recipes (SOPs) and supervisor's instructions.
负责工作区域的设备及用具的日常清洁与消毒,遵守个人卫生规范。
Be responsible for the daily cleaning and sanitization of personal work area, equipment, and utensils, adhering to personal hygiene protocols.
正确操作和维护常用的饼房设备(如搅拌机、烤箱、巧克力喷枪等),并报告任何故障。
Operate and maintain commonly used pastry kitchen equipment (e.g., mixers, ovens, chocolate spray guns) correctly, and report any malfunctions.
协助进行原材料的领取、初步处理、称量与存放,注意节约使用,减少浪费。
Assist in the collection, preliminary processing, weighing, and storage of raw materials, paying attention to economical usage and minimizing waste.
根据每日任务单,提前完成宴会、自助餐或零点所需产品的备料与准备工作。
Complete the mise-en-place and preparation of products required for banquets, buffets, or à la carte service in advance based on daily task sheets.
积极参与部门组织的技能、卫生及安全培训,不断提升技术水平。
Actively participate in departmental training on skills, hygiene, and safety to continuously improve technical proficiency.
熟知食品添加剂的的使用方法。
Familiar with the use of food additives.
完成上级交代的其他任务。
Carry out other tasks as directed by supervisor.
