岗位职责
1. 全面负责西餐厅日常营业运作,统筹前厅服务工作,合理安排服务员、传菜员的在岗班次及工作任务,保障餐厅营业流程顺畅、高效。每日班前召开例会,传达当日营业重点、特色菜品、活动政策及服务注意事项,班后总结当日工作问题并做好记录整改。Fully responsible for the daily operation of the western restaurant, coordinate the front hall service work, reasonably arrange the shifts and work tasks of waiters and food runners, and ensure the smooth and efficient operation of the restaurant. Hold pre-shift meetings every day to convey daily operation priorities, special dishes, activity policies and service precautions, summarize daily work problems after work and make records and rectifications.
2. 严格监督餐厅各项标准化服务流程,包括迎宾引位、点餐推介、酒水服务、餐中跟进、餐后收尾等全流程服务,及时纠正员工不规范操作。主动巡视餐区,关注顾客用餐体验,及时响应顾客需求,妥善处理用餐过程中的投诉、异议及突发问题,最大限度提升顾客满意度。Strictly supervise all standardized service processes of the restaurant, including the whole process of greeting and seating, ordering recommendation, beverage service, in-dining follow-up and post-meal finishing, and correct employees' non-standard operations in a timely manner. Patrol the dining area actively, pay attention to customers' dining experience, respond to customers' needs in a timely manner, properly handle complaints, objections and unexpected problems during dining, and maximize customer satisfaction.
3. 负责餐厅餐具、器皿、布草、酒水、耗材等物资的日常盘点、领用、保管与补充,把控物料消耗成本,杜绝浪费。监督餐厅整体环境卫生、餐桌摆台、灯光音乐、绿植装饰等细节,确保餐厅环境符合高端西餐厅标准化整洁、雅致的营业标准,做好餐前布置、餐中维护、餐后清洁检查工作。Responsible for the daily inventory, requisition, storage and supplement of restaurant tableware, utensils, linen, drinks, consumables and other materials, control material consumption costs and eliminate waste. Supervise the overall environmental hygiene, table setting, lighting and music, green plant decoration and other details of the restaurant, ensure that the restaurant environment meets the standardized clean and elegant operation standards of high-end western restaurants, and complete pre-meal layout, in-meal maintenance and post-meal cleaning inspection work.
4. 负责前厅服务团队的日常管理、考勤监督、工作考核,调动员工工作积极性,维护良好的团队工作氛围。定期开展员工服务技能、西餐礼仪、菜品知识、酒水知识、应急处理等专项培训,提升团队专业服务水平,协助店长完成新员工带教、转正考核工作。Responsible for the daily management, attendance supervision and work assessment of the front hall service team, mobilize employees' work enthusiasm and maintain a good team working atmosphere. Regularly carry out special training on staff service skills, western dining etiquette, dish knowledge, beverage knowledge and emergency handling to improve the professional service level of the team, and assist the store manager in completing the training and probation assessment of new employees.
5. 每日核对营业数据、账单明细,确保收银、点餐、结账流程无差错,做好营业台账记录。对接后厨、收银、库房等相关岗位,协调解决跨岗位工作问题,保障前后场工作衔接顺畅。配合店长完成月度、季度营业总结,落实门店各项管理制度及营销活动落地执行。Check daily operation data and bill details to ensure no errors in cashier, ordering and checkout processes, and complete operation account records. Dock with kitchen, cashier, warehouse and other relevant positions, coordinate and solve cross-post work problems, and ensure smooth connection of front and back field work. Cooperate with the store manager to complete monthly and quarterly operation summaries, and implement various store management systems and marketing activities.
岗位要求
1. 年龄20-35岁,中专及以上学历,酒店管理、餐饮服务相关专业优先;1年及以上西餐厅服务管理经验,熟悉西餐完整服务流程、西式礼仪及酒水基础知识,有高端西餐厅、星级酒店西餐工作经验者优先。Aged 20-35, technical secondary school or above degree, major in hotel management and catering service is preferred; with more than 1 year of working experience in western restaurant service management, familiar with the complete western food service process, western etiquette and basic beverage knowledge, priority will be given to those with working experience in high-end western restaurants or star hotel western restaurants.
2. 熟练掌握西餐摆台、分餐、酒水调制、餐中服务等专业技能,精通各类西餐菜品、红酒、咖啡、茶饮的特点及推介话术;具备基础英语沟通能力,可完成日常对客英文服务交流;熟悉餐饮行业卫生标准、食品安全规范及门店管理制度,能够独立处理各类服务突发问题及客诉。Proficient in professional skills such as western food table setting, food serving, beverage mixing and in-dining service, proficient in the characteristics and promotion words of various western dishes, red wine, coffee and tea; have basic English communication skills to complete daily English service communication with customers; familiar with catering industry hygiene standards, food safety specifications and store management systems, and able to independently handle various service emergencies and customer complaints.
3. 形象气质良好,仪容仪表整洁得体,言行举止优雅规范,具备良好的服务意识、职业素养和团队管理能力。工作认真负责、积极主动,抗压能力强,能够适应餐饮行业倒班、节假日在岗的工作节奏;具备优秀的沟通协调能力、观察力和应变能力,善于调动团队氛围,高效落地各项工作安排。Good appearance, neat and appropriate grooming, elegant and standardized behaviors, with good service awareness, professional literacy and team management ability. Earnest and proactive in work, strong pressure resistance, able to adapt to the shift work and holiday on-duty rhythm of the catering industry; have excellent communication and coordination skills, observation and adaptability, good at mobilizing team atmosphere and efficiently implementing various work arrangements.
4. 严格遵守门店各项规章制度,恪守食品安全、环境卫生工作准则,无不良从业记录。具备良好的责任心和执行力,服从上级工作安排,廉洁自律、以身作则,能够带头规范服务标准,带领团队完成营业指标。Strictly abide by all store rules and regulations, adhere to the working guidelines of food safety and environmental hygiene, with no bad employment records. Have good sense of responsibility and executive ability, obey superior work arrangements, be honest and self-disciplined, set an example, take the lead in standardizing service standards, and lead the team to complete operation indicators.
